How do you find the RIGHT School?

That sounds like a pretty lame "lesson". I too just wrapped up teaching for ten years in Adult Education myself, so I understand you must be very perplexed from the lack of instruction.
(Much) better instructors do exist.

Maybe ask for references from several instructors and go with the guy/gal who ends up getting the best testimonials from phone calls you make? It might take a few hours, but it's probably worth it.
